KANCHEEPURAM IDLI INGREDIENTS: 3 cups parboiled rice
METHOD: Soak the rice in hot water for 4 hours and then grind it. In the same manner, soak the udad dal in cold water for 4 hours and then grind it. Now mix the two and allow it to ferment overnight after adding salt. Next morning make sure that you mix the batter well. Heat 2 tbsp. of oil and splutter
mustard seeds, asafoetida, cashew nuts (chopped) and green chillies in
it. Switch off the flame and add ghee. Pour it into the batter and mix
thoroughly. Pour this batter into the idli moulds and steam as you would
a regular idli.
