RAVA DOSAI INGREDIENTS: 1 cup maida
METHOD: First, sieve the maida. Then put a pinch of baking powder in 2 cups of water and add it to the maida. Ensure that your batter is free from lumps. Keep it aside for about 6 hours. Whenever you are ready to prepare the dosa, mix the sooji with water in the ratio of 1:4. Add salt. Now mix both the batters and dilute it with a little water. For the seasoning, splutter cumin
seeds, mustard seeds, curry leaves and green chillies in a little hot ghee
and mix it into the batter. Grease the pan with oil and when it becomes
hot, spread the batter thinly by tilting the pan gently. Roast on one side
only and serve hot with chutney.
