MEDU WADA INGREDIENTS: 2 cups udad dal
METHOD: Wash and soak the dal for 4 hours. Then grind to a fine paste. Add chopped green chillies, asafoetida, salt and curry leaves to the ground paste along with 3 tbsp. of hot water. Make small balls and flatten them on your palm. Make a small hole in the center of each portion. Make 2-3 at a time and deep fry in hot oil till golden brown. Drain out oil on a brown paper. Serve hot with coconut chutney. A variation: Dahi vada can be made by using the same vada soaked in water. All you have to do is beat the dahi and season it with salt, red chilli powder and cumin powder. Immerse the vada in the seasoned yoghurt and serve with a sweet tamarind chutney.
